The iconic North Hobart wine bar formerly known as Willing Bros has entered an exciting new era. Now under female ownership, the vibe is warm, the service swift, and the focus firmly on great wine, food, and hospitality.
Willing Wine pairs its extensive beverage offering with a simple, well executed menu featuring produce driven wine bar fare. Signature dishes include Fish Crudo,Pasta alla Vodka and Steak Frites alongside local oysters and seasonal snacks.
The wine list champions emerging Tasmanian producers alongside classic labels from near and far. With 15 wines available by the glass and a cellar of over 300 bottles, there’s a drop to suit every taste and curiosity, rounded out with an excellent cocktail list and non-alcoholic options.
The venue is led by Angie Nichols and Emma Davis, who took the reins in 2024, the old-school friends turned business partners also own and operate the neighbouring cafe - Raincheck Lounge and founded the award-winning cocktail bar Society Salamanca in 2015.
