The wine list highlights emerging Tasmanian talent alongside classic producers from near and far. With 15 wines by the glass and over 300 bottles to explore, there is a drop to suit every taste and curiosity.
Willing is led by new owners Angie Nichols and Emma Davis, who took the reins in 2024. They also own and operate the iconic neighbouring cafe Raincheck Lounge and founded the award-winning cocktail bar Society – Salamanca in 2015.
